Why the term HOneSTERIA?
It is the union of 2 names and 2 concepts:
Honesty bar + Hosteria = HOneSTERIA
A modern service in use in many metropolitan hotels.
It is a bar without staff, in which it is the guest who serves him/herself the drinks; the same guest is asked to write down the beverages enjoyed.
The hotel relies on the honesty of the guest in correctly accounting for the purchases.
Since the thirteenth century, it has been a refreshment point as well as a meeting place, where wine is always present, accompanied by simple but tasty dishes.
The blending of these 2 concepts, honesty and conviviality, reflects the philosophy of hospitality we offer in Colleverde:
